FAQ

What are the 14 allergens?

Gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, tree nuts, celery, mustard, sesame, sulphur dioxide and sulphites, lupin and molluscs (Annex II of EU Regulation 1169/2011).

Is an allergen menu mandatory?

Food businesses must tell customers about the allergens in their dishes. How you do it depends on national rules: in writing on the menu, in an allergen matrix, or with a sign directing guests to staff.

How do I show “may contain”?

Use “may contain” when an allergen is not an ingredient but could get in through cross-contact in the kitchen. It is shown with a different symbol in the chart.

Can allergens be worked out from recipes?

In GastroBrain they are: ingredient allergens flow into every recipe automatically and supplier data sheets are read for you. The menu is generated in five languages.
